Valentines Cupcakes

Valentine’s Day is a day to show your loved ones how much they mean to you. I personally chose not to do this by buying the typical gifts you see advertised under retailers ‘Valentines’ section such as watches because to me, a watch isn’t romantic and is not what Valentine’s Day is about. For me, it is much more about spending the day with loved ones, doing something you enjoy or spending money on something much more romantic and sentimental.

One thing I have enjoyed doing for Valentines over the last two years is baking. I like baking all year round, not just Valentines but February 14th allows the girly love hearts to come out! This year, I decided to use a Mary Berry recipe to make these cupcakes and then topped them with sweets!

Valentines-Cupcakes (7)Ingredients:
  • 175 g butter
  • 175 g self-raising flour
  • 175 g caster sugar
  • 1/2 tsp baking powder
  • 3 large eggs
  • 1/2 tsp vanilla extract
Butter icing ingredients:
  • 175 g butter
  • 1/2 tsp vanilla extract
  • 2 –3 tbsp milk
  • 350 g icing sugar
  • Colouring

&This recipe makes 22 cupcakes!Valentines-Cupcakes (6)Valentines-Cupcakes (8)I then used a piping bag to ice the cupcakes a very pale pink – almost peach – colour. I didn’t want to go intense pink or red just because for me that’s too much. Valentines-Cupcakes (2)Finally, I decorated the cupcakes with different sweets. I used both heart shapes from a Haribo packet and some Love Heart sweets. I did decorate some cupcakes with simple chocolate sprinkles too.

    Your cupcakes look fabulous! I just finished baking 6 dozen cupcakes for all of my sons’ classrooms. It was fun but exhausting because I had 3 little “helpers.” 😉
